Until the last possible minute we blend and taste to ensure our finished Viognier is exactly what we are looking for. In March we tasted the Viognier straight from French and American Oak barrels, and what a difference there is in each separate lot.
And this taste… The Final Blend!
It consists of a mix between the French barrels, American barrels, and a lot I just tried, the stainless steel aged. As a refresher, the French Oak barrel has viscosity and creaminess with well integrated white peach and pear flavor. The American Oak barrel also has viscosity, but with more of a pineapple note and a bit of spice. What the stainless brings into the picture is a white peach aroma and flavor, without a trace of any other character – pure white peach Viognier.
When the three unique lots are brought together it has such a nice balance between the juicy flavors from the stainless steel Viognier, to the creamy peach, pear and pineapple character, with a hint of the spice from the oak aged portions. It sounds like a lot going on, but they all complement each other making an inviting wine!
Bottle date is May 12… and then a little rest time in the bottle until the release date! Our Wine Club Members will have the first taste – are you a member yet?
