The Viognier is in bottle! We have waited a year since the vineyard bloomed, the winegrapes were harvested, fermented, barrel and stainless steel aged, blended, and filtered, to have the first sip from the first bottle off the Vaz Mobile Bottling line, and it’s as good as we expected!
The aroma and flavor along with the viscosity is such a nice balance – I am anxious to release the wine, but we have to be patient… there is a little bottle shock.
When wine is bottled, the process of filtering, filling, capping, and labeling, can cause a little stress to the wine. It’s nothing that it can’t recover from; however, it does take a few weeks.
And bottling causes a little stress for us too! Between glass, screwcaps, and labels, sometimes it seems impossible for the process to be perfect. The Viognier was a challenge, but it looks and tastes great, and just like the wine, we eventually recover from the stress of it all!
And now the Viognier is taking a vacation and relaxing in a calm-cool warehouse to cure the wine-stress caused by bottling. It will be ready the first week of June for our Wine Club Members to enjoy the first vintage of Viognier – a refreshing wine perfect for summer!
